About our Green Chickpea stew

Hippocrates the father of medicine said, 'Let food be thy medicine and medicine be thy food'.

 

I am really proud of the Gaia Chickpea stew. With an array of seasonal Greens packed with antioxidants no wonder why people who eat it call it medicinal. I believe Hippocrates wouldn't disagree.

The whole chickpeas are slow cooked with spices and tahini. Kale, Chard, Spinach, Lettuce, Spring Onion and Dill are added at the end of the cooking process when the temperature drops, to maintain all their nutrients. Last but not least, the extra virgin olive oil and the fresh lemon juice which makes the iron in the greens bioavailable and the food alkaline. 

This dish is packed with antioxidants and it is perfect for Autumn so it boosts our immune system before the winter colds kick in. How often do you give your body the chance to receive all these 8 main nutrients at once..? Protein, Magnesium, Vitamin C and D, Calcium, Zinc, Iron and Folate are all in this wholesome stew complementing each other.

What I always think as I am eating foods like this, with high content of phytonutrients is how our bodies are able to store them and have them available for longer as opposed to animal deriving nutrients which are available only for a day or two.
