My nan was a legendary cook.
I was a TV and Film Producer and I never wanted to have a restaurant or anything like that. After her passing, I was missing her so much, I started meditating and cooking her recipes in an attempt to cope with the immense pain from her loss.
I went inwards. I cried a lot. I went deep. I found my self and a bit further in I found the stories, the songs, the flavours, the moments and so I reconnected with my roots. I went so deep that at some point I felt I connected with the Earth. I saw that her as the great nan of us all, being sick like my nan was and I was called to do my best to save her.
I created Gaia Pulses, meaning the heartbeat of the Earth.
As a brand, we are dedicated to cooking with pulses because they are the most sustainable crop in the history of food and they are in my Greek DNA.
In my nan's heritage recipes, pulses are the protagonists in glorious, soulful dishes, packed with plant based protein, fibre, nutrients and antioxidants and have been the cornerstone of the Mediterranean diet for millennia.
I was called to feed people with loving nourishment in the way only real food can do.
I cook with intention in small batches, our pots are cold-filled to prevent leaching of phthalates. I cook and preserve our meals in the traditional ways I learnt as a teen from my nan, with herbs, spices, lemon and apple cider vinegar, and it works beautifully without the need for any chemicals.
With Ancestral knowledge, pride and dignity I create alkaline food to connect us with the Earth, our roots and each other.
