Green Chickpea stew

This is a combination of two great traditional dishes. The original Revithada from Sifnos and the Magiritsa which is with meat but here of course vegan and with chickpeas. An array of seasonal greens like Spinach, Kale, Chard, combined with Cumin, Rosemary and other Herbs. There is also tahini combined with lemon for a zingy finish to this super nutritious alkaline dish.

A 350g portion of this dish will cover at least the 70% of the daily need for protein and fibre of an average adult. It is naturally low in fat, saturates and sugar. Its low glycemic index and high content on Calcium, B Vitamins, Folate, Vitamin C, K, Manganese and Magnesium make this dish a powerful super food with very high antioxidant properties!
