Sprouted Lentil & Quinoa stew

Inspired by 'Fakehs', a typical Greek Lentil stew. The Gaia version is enriched with sprouted Red Quinoa for added protein - Apple Cider Vinegar, Garlic, Extra Virgin Olive Oil, Spring onion, Wild Thyme, Oregano, Turmeric and Dill. This dish is full of Iron, Magnesium, Vitamin C and Antioxidants.

The lentils and quinoa depending on the seasonal temperature are sprouted some times more and some times less. In any case with not only soaking but also sprouting the pulses we make them easily digestible and we increase the bioavailability of their nutrients.

A 350g portion of this dish will cover at least the 60% of the daily need for protein and fibre of an average adult. It is naturally low in fat, saturates and sugar. Its low glycemic index and high content on Iron, B Vitamins, Folate, Vitamin C, K and Manganese make this dish a super food.
